- 500g boneless chicken (cut into cubes)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 4-5 dried red chilies
- 1 tablespoon Szechuan peppercorns
- 1 bell pepper (diced)
- 1 onion (diced)
- 1/4 cup roasted peanuts
- 2-3 garlic cloves (minced)
- 2 tablespoons ginger (chopped)
- 2 tablespoons hoisin sauce
- 1 tablespoon chili paste
- Salt to taste
Method:
- Marinate the chicken: Mix soy sauce, rice vinegar, sesame oil, and cornstarch in a bowl. Add chicken cubes and marinate for 10-15 minutes.
- Stir-fry the spices: Heat oil in a wok, then add dried chilies and Szechuan peppercorns. Stir-fry for about 1 minute.
- Add garlic, ginger, onion, and bell pepper. Stir-fry for 2-3 minutes until the vegetables soften.
- Cook the chicken: Add the marinated chicken and stir-fry until it turns golden brown.
- Combine: Add hoisin sauce, chili paste, and roasted peanuts. Toss everything together and cook for another minute.
- Serve: Garnish with extra peanuts and serve hot with steamed rice.
