Ingredients:

  • 500g boneless chicken (cut into cubes)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 4-5 dried red chilies
  • 1 tablespoon Szechuan peppercorns
  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 1/4 cup roasted peanuts
  • 2-3 garlic cloves (minced)
  • 2 tablespoons ginger (chopped)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon chili paste
  • Salt to taste

Method:

  1. Marinate the chicken: Mix soy sauce, rice vinegar, sesame oil, and cornstarch in a bowl. Add chicken cubes and marinate for 10-15 minutes.
  2. Stir-fry the spices: Heat oil in a wok, then add dried chilies and Szechuan peppercorns. Stir-fry for about 1 minute.
  3. Add garlic, ginger, onion, and bell pepper. Stir-fry for 2-3 minutes until the vegetables soften.
  4. Cook the chicken: Add the marinated chicken and stir-fry until it turns golden brown.
  5. Combine: Add hoisin sauce, chili paste, and roasted peanuts. Toss everything together and cook for another minute.
  6. Serve: Garnish with extra peanuts and serve hot with steamed rice.
