- 200g mushrooms (sliced)
- 100g tofu (cubed)
- 1/4 cup bamboo shoots (julienned)
- 4 cups chicken or vegetable broth
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste
- 1 teaspoon white pepper
- 1 egg (beaten)
- 1 tablespoon cornstarch (mixed with water)
- 2-3 garlic cloves (minced)
- 1-inch ginger (sliced)
- Fresh coriander (for garnish)
Method:
- Prepare the broth: In a pot, heat the broth and add the mushrooms, tofu, and bamboo shoots. Bring to a boil and simmer for 5-7 minutes.
- Season: Stir in soy sauce, rice vinegar, chili paste, white pepper, and garlic. Simmer for another 5 minutes.
- Thicken the soup: Mix cornstarch with water to make a slurry and add it to the soup. Stir until thickened.
- Add egg: Slowly drizzle the beaten egg into the soup, stirring gently to create egg ribbons.
- Serve: Garnish with fresh coriander and serve hot.
