Ingredients:

  • 200g mushrooms (sliced)
  • 100g tofu (cubed)
  • 1/4 cup bamboo shoots (julienned)
  • 4 cups chicken or vegetable broth
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 1 teaspoon white pepper
  • 1 egg (beaten)
  • 1 tablespoon cornstarch (mixed with water)
  • 2-3 garlic cloves (minced)
  • 1-inch ginger (sliced)
  • Fresh coriander (for garnish)

Method:

  1. Prepare the broth: In a pot, heat the broth and add the mushrooms, tofu, and bamboo shoots. Bring to a boil and simmer for 5-7 minutes.
  2. Season: Stir in soy sauce, rice vinegar, chili paste, white pepper, and garlic. Simmer for another 5 minutes.
  3. Thicken the soup: Mix cornstarch with water to make a slurry and add it to the soup. Stir until thickened.
  4. Add egg: Slowly drizzle the beaten egg into the soup, stirring gently to create egg ribbons.
  5. Serve: Garnish with fresh coriander and serve hot.
